KSP Meal Plan #25: 19th -25th Mar: Watermelon Gazpacho & Baked Afghani Baingan To Usher In The Summer

Holi is over and summer has arrived with a bang in most parts of India. North India, however, is experiencing tricky weather with mornings and evenings still nippy and the days are warm. This is the time to boost your child's immunity and keep them safe from the viral infections doing the rounds.

So let's see what interesting food is on the menu this week - we have Mexican Rice with Refried Beans and Guacamole. If you're wondering what are Refried Beans then let me put you out of your misery. It's basically boiled rajma which has been cooked with masalas and mashed. Very easy and very tasty. For all of you who are not baingan fans ( like me), I would say try the Baked Afghani Baingan and you'll never say no to eating baingan again.
