Recipe: Welcome Summer With This Refreshing Watermelon Gazpacho!

What's a gazpacho? Don't Google it, we tell you! Gazpacho is a Spanish-style soup that is traditionally made with tomatoes and served chilled. But there are so many ways to create your own spin on traditional gazpacho, so here is outs! Summer is here and watermelons are flooding the market already. At KSP we like you to try something different, so to start the summer off we're going to make a Watermelon Gazpacho.  Trust me when I say this, using watermelon instead of tomatoes in the gazpacho is just blissful to beat the summer heat.

This summer fruit is packed with water and a lot of goodness and has very few calories. Watermelons are a powerhouse of antioxidants and rich in Vitamin C. It helps lowering blood pressure, excellent for bone health, improves eyesight and boosts the immune system. So eat it whole or add it to your soup and reap the benefits this summer.

Ingredients - Serves 2-3

  • 2 Cups Chopped Watermelon
  • 1 small Cucumber
  • 2 Tbsp Lemon Juice
  • 1 Tsp Olive Oil
  • 1/4 Tsp Black Pepper Powder
  • Salt
  • 1 Green Chilli/Jalapeno ( optional) - just for the extra kick
  • A handful of basil leaves to add to the soup and some more for the garnishing

  • De-seed the watermelon and cut the into large chunks. Chop a few pieces finely and keep aside.
  • De-seed the cucumber and cut into large chunks
  • To the blender add cucumber, large watermelon pieces, jalapeno (if using), a handful of basil leaves, salt, oil and pepper. Blend till it turns frothy.
  • Transfer it to a serving bowl and mix in the finely chopped pieces of watermelon you have kept inside.
  • Refrigerate it for an hour or two. Serve it chilled. Garnish with basil leaves.

Note: If you don't have time to chill it for long, you could add a few ice cubes but it will dilute the soup.
