Meal Plan # 55: 8th – 14th Oct: Staying Healthy With Purple Sweet Potato Tacos And Spinach Adai

Diwali parties have completely taken over the social scene for most of us living in Delhi. I have been out quite often and I can see the weighing scale starting to tip to the wrong side. So I decided I would eat home cooked healthy meals through the week so that I can indulge a little next week. Yeah! Diwali is almost here!

This week we have eggs in a bun for breakfast. While I was making the meal plan this week I got to thinking about how many different ways we can actually cook eggs for breakfast. So I've got hard boiled eggs, soft-boiled eggs, scrambled eggs, sunny side up, eggs Benedict, deviled eggs, baked eggs and omelettes. If you have more ideas tell me in the comments below.

We've also got Vegetable Thai Curry for dinner. Personally, I prefer the taste of red curry over a green curry. Thankfully my kids share similar tastes. I think its actually a super healthy meal since you can toss in a variety of vegetables and it contains coconut milk. (Healthy milk option too) My kids love it.
