Nutritionist Dhvani Shah Shares 2 Healthy & Light Diwali Recipes That You Must Make Today!

This week is full of fun and excitement for everyone in India. Diwali, the Festival of Lights is the biggest festival in our country. As you know, any festival involves loads of eating and entertaining. Most of us love indulging during this time. But there's a tiny voice in our heads that keeps saying - "Go easy, it's calorie loaded"

So this Diwali, we got together with Naturopathic Nutritionist Dhvani Shah and she showed us two recipes which are healthy and super tasty - you won't have to feel guilty about eating more than one. The first recipe is a low-carb Cheesecake in a Glass (without any cheese) and the other recipe is a Vegan Cracker - you can serve it as a party snack or just munch on it when the hunger pangs hit.

Cheesecake In A Glass

Ingredients

  • 4- 5 Dates (Khajur)
  • 4-5 Cashew Nuts (Kaju)
  • 1 cup Yoghurt
  • 1 Cup Cottage Cheese (Paneer) crumbled into small pieces
  • 3-4 pieces of Banana sliced
  • 1 Tsp Vanilla Extract
  • 1 Tsp Lemon Juice
  • A pinch of Salt
  • A spoon of Raspberry Preserve

Method

  • Add the dates and cashew nuts in a grinder and grind to a fine powder.
  • Take a glass and press the powder mix into the bottom to make a base for your cheesecake.
  • Add the yoghurt, cottage cheese, banana, vanilla extract, lemon juice and salt to a blender and combine it well.
  • Pour the liquid on the dates and cashew base.
  • Top with some raspberry preserve and put it in the fridge to chill.

There you have your low carb yummy Cheesecake in a Glass.
