As a mum of two, I’m constantly trying to think of things to give the kids in their tiffin box. They get pretty hungry on the bus back and giving them a healthy bite to tide them over is a good idea. One of the healthy bus snacks I include in their tiffin box is Gol Papdi.

Gol Papdi is a healthy bite of yumminess that has the goodness of gur and wheat flour (atta) and is made in mostly Gujarati households. Today’s recipe is straight from the Zaveri household where Grandma Jyoti Zaveri lets us in on a secret ingredient she includes in her Gol Papdi to make it tasty and healthy for her grandkids. She uses goond in her Gol Papdi. Goond or edible gum is extremely healthy for the bones.

After I delivered both my babies, my mother made sure that I ate at least one piece of Gol Papdi every day. The health benefits of the ingredients – ghee, gur and goond – make it the right kind of snack to have when your body is still recovering from the efFects of labour.

Ingredients

  • 1/2 Cup Ghee
  • 1 Cup Whole Wheat Flour (Atta)
  • 1/2 Cup Jaggery (Gur)
  • 2 Tbsp Edible Gum ( Goond)
  • Sliced Almonds and Pistachios

Method

  • Melt the ghee in a kadai and add the atta to it. Saute this for 2-3 minutes.
  • Then add the edible gum (goond) and mix it and let it cook with the atta mixture.
  • Take it off the gas and once it’s slightly cooled, add jaggery to it as per your taste and mix well.
  • You need to then take it out on a plate to let it set. Pat it into whatever shape you want and garnish with the almonds and pistachios.
  • Once its cooled down and set, cut into pieces.
